Food Safety Management Systems
In January 2006 new food hygiene laws came into effect; the regulations require food businesses to implement and maintain food safety management procedures based on HACCP principles (Hazard Analysis Critical Control Points).
HACCP is a system that helps food business operators look at how they handle food and introduces procedures to make sure the food produced is safe to eat. It focuses on identifying the critical points in a process where food safety hazards could occur and puts steps in place to prevent things from going wrong.
Keeping accurate records such as daily temperature checks, training records, delivery checks etc. are an important part of a HACCP system.
As part of routine inspections, the enforcement officer will check that the business has an appropriate HACCP-based food safety management system in place
The Food Standards Agency (FSA) has developed a range of food safety management packs for different sectors of the food industry to help food business operators manage their food safety management procedures. See the range at food.gov.uk.
